Easy Slow Cooker Cinnamon Roll Casserole for Christmas Morning

This easy slow cooker cinnamon roll casserole is the perfect stress-free Christmas morning breakfast. With a soft, custard-like center and caramelized edges, it lets you enjoy the holiday while the slow cooker does the work.

Ingredients

  • 2 cans (12.4 oz each) refrigerated cinnamon rolls with cream cheese frosting
  • 1 cup (240 ml) heavy cream
  • 4 large eggs, at room temperature
  • 1/2 cup (100 g) packed brown sugar
  • 2 teaspoons (10 ml) vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 cup (60 g) unsalted butter, melted
  • 1/2 cup (60 g) chopped pecans or walnuts (optional)
  • 1/4 cup (40 g) raisins or dried cranberries (optional)

Instructions

  1. Grease the inside of a 6-quart or 7-quart slow cooker with butter or non-stick spray. If using a liner, place it in now.
  2. Open both cans of cinnamon rolls. Set the frosting packets aside. Cut each roll into quarters using a sharp knife or kitchen shears.
  3. Place the quartered roll pieces into the slow cooker in an even layer. Do not overcrowd them.
  4. In a medium mixing bowl, whisk together the heavy cream, eggs, brown sugar, vanilla extract, and ground cinnamon until smooth and the brown sugar is mostly dissolved.
  5. Slowly pour the custard mixture over the cinnamon roll pieces, making sure it coats everything evenly. Gently press down on the rolls with a spatula so they absorb some of the liquid.
  6. Drizzle the melted butter over the top. Sprinkle on the chopped pecans and raisins if using. Gently stir to distribute everything.
  7. Cover the slow cooker with the lid. Cook on LOW for 2 to 2.5 hours. Do not open the lid during the first 90 minutes.
  8. Once done, turn off the slow cooker and let the casserole rest for 10 minutes with the lid off.
  9. Microwave the reserved cream cheese frosting packets for 10-15 seconds until thin and drizzle-able. Drizzle generously over the warm casserole.
  10. Serve warm with a large spoon or spatula.

Notes

Do not overmix the custard. Use room temperature ingredients. Layer thoughtfully for even cooking. Resist the urge to peek during cooking. Toast nuts for extra flavor. Grease the slow cooker well to prevent sticking.
