  • 2 cups (180g) rolled oats (old-fashioned, not instant)
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups (360ml) milk (dairy or plant-based like almond or oat)
  • 1 cup (240g) Greek yogurt (plain, full-fat or low-fat)
  • 1/4 cup (85g) honey
  • 1 teaspoon vanilla extract
  • 1 cup (150g) fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your muffin tin or silicone cups by placing them on a sheet pan for stability.
  2. In a large bowl, combine the dry ingredients: rolled oats, baking powder, ground cinnamon, and salt. Stir to mix evenly.
  3. In a separate bowl, whisk together the wet ingredients: milk, Greek yogurt, honey, and vanilla extract until honey is well incorporated.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined. If too dry, add a splash more milk (a tablespoon at a time).
  5. Fold in fresh blueberries carefully to avoid crushing them.
  6. Spoon the mixture evenly into each muffin cup—about 1/3 to 1/2 cup (80-120g) per cup. Smooth the tops gently.
  7. Drizzle a little extra honey on top of each cup for a golden, sticky finish.
  8. Place the muffin cups on the sheet pan and bake for 25-30 minutes until tops are set and lightly golden. A toothpick inserted should come out mostly clean with a few moist crumbs.
  9. Remove from oven and cool on a rack for at least 10 minutes before removing the cups from their molds.
  10. Store leftovers in an airtight container in the fridge for up to 5 days. Reheat in the microwave for 30-45 seconds or enjoy cold.

Notes

Do not overmix the batter to avoid gummy texture. Use silicone muffin cups for easier removal and cleanup. Let oat cups cool fully before removing to prevent sticking. Frozen blueberries can be used without thawing to avoid watery batter. Baking time may vary by oven; check at 20 minutes if oven runs hot.
