A quick and easy weeknight dinner featuring juicy chicken thighs and crispy potatoes coated in a sticky, savory-sweet honey mustard glaze, all roasted on a single sheet pan.

Ingredients

  • Boneless, skin-on chicken thighs
  • Yukon Gold potatoes (or wax/red potatoes), cut into 1-inch cubes
  • Dijon mustard
  • Wildflower honey
  • Apple cider vinegar
  • Garlic powder
  • Onion powder
  • Dried thyme
  • Kosher salt
  • Black pepper
  • Olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and cut potatoes into 1-inch cubes. Place in a large mixing bowl and toss with 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  3. In a small bowl, whisk together 1/3 cup Dijon mustard, 1/4 cup honey, 1 tablespoon apple cider vinegar, 1 teaspoon garlic powder, 1/2 teaspoon dried thyme, and a pinch of salt until smooth.
  4. Add chicken thighs to the bowl with the potatoes. Pour half of the honey mustard sauce over the mixture and toss to coat everything evenly.
  5. Line a large half-sheet pan (18×13 inches) with parchment paper or grease lightly. Spread the chicken and potatoes in a single layer, ensuring they are not crowded.
  6. Roast for 20 minutes.
  7. Remove from oven, flip the chicken pieces, and spoon accumulated sauce from the pan over the chicken.
  8. Return to oven and roast for another 15-20 minutes, or until chicken reaches an internal temperature of 165°F (74°C) and potatoes are tender and golden.
  9. Remove from oven and let rest for 5 minutes before serving.

Notes

Ensure potatoes are cut into uniform 1-inch cubes for even cooking. Do not crowd the pan, as this will cause steaming instead of roasting. If using chicken breasts, reduce cooking time by 5-10 minutes and pound to even thickness. Honey burns easily; tent with foil if darkening too quickly.
