A cozy and indulgent breakfast casserole combining the gooey cinnamon rolls with a custardy French toast soak, perfect for lazy weekend mornings or holiday brunches.

Ingredients

Scale
  • 8 refrigerated cinnamon rolls (recommend Pillsbury)
  • 6 large eggs, room temperature
  • 2 cups (16 fl oz) whole milk or half-and-half (can substitute almond milk for dairy-free)
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 2 tablespoons granulated sugar or brown sugar
  • A pinch of salt
  • 2 tablespoons unsalted butter, melted
  • Cream Cheese Glaze: 4 oz cream cheese, softened; 1 cup powdered sugar; 2-3 tablespoons milk or cream; 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with melted butter.
  2. Cut each cinnamon roll into quarters.
  3. Arrange cinnamon roll pieces evenly in the baking dish, pressing down gently.
  4. In a large bowl, whisk together eggs, milk, vanilla extract, cinnamon, nutmeg, sugar, and salt until smooth and slightly frothy.
  5. Pour custard mixture evenly over cinnamon rolls, pressing down lightly to soak all pieces.
  6. Cover dish tightly with plastic wrap or foil and refrigerate for at least 8 hours or overnight.
  7. Remove casserole from fridge about 20 minutes before baking.
  8. Bake uncovered for 40-45 minutes at 350°F (175°C), until top is golden and custard is set.
  9. While baking, beat softened cream cheese, powdered sugar, milk, and vanilla extract until smooth and pourable for glaze.
  10. Let casserole cool 5-10 minutes after baking, then drizzle with cream cheese glaze and serve warm.

Notes

Overnight soak is key for perfect texture; use room temperature eggs and milk to avoid curdling. Tent with foil if edges brown too fast. Cream cheese should be softened at room temperature for smooth glaze. Can be adapted for vegan or gluten-free diets.
