Easy Overnight Blueberry Baked Oatmeal with Almond Crumble

A make-ahead breakfast featuring creamy baked oatmeal with bursts of jammy blueberries and a crunchy almond crumble topping. Perfect for busy mornings or lazy weekends.

Ingredients

  • 2 cups (180g) rolled oats
  • 1 ½ cups (360ml) milk (any kind)
  • ⅓ cup (80ml) pure maple syrup
  • 1 large egg
  • 2 tablespoons (30ml) melted coconut oil or butter
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • 1 ½ cups (225g) blueberries (fresh or frozen, do not thaw)
  • ½ cup (45g) sliced almonds
  • ¼ cup (22g) rolled oats
  • 2 tablespoons (25g) coconut sugar or brown sugar
  • 1 tablespoon (15ml) melted coconut oil or butter
  • ¼ teaspoon cinnamon

Instructions

  1. Lightly grease an 8×8-inch baking dish with butter or coconut oil.
  2. Spread 1 ½ cups of blueberries evenly across the bottom of the prepared dish. If using frozen berries, add them straight from the freezer.
  3. In a medium bowl, whisk together milk, maple syrup, egg, melted coconut oil (or butter), vanilla extract, salt, and cinnamon until smooth.
  4. Pour 2 cups of rolled oats into the bowl with the wet ingredients and stir until all oats are evenly coated.
  5. Pour the oat mixture evenly over the blueberries in the baking dish. Do not stir.
  6. In a small bowl, combine sliced almonds, ¼ cup rolled oats, coconut sugar (or brown sugar), ¼ teaspoon cinnamon, and 1 tablespoon melted coconut oil. Stir with a fork until moistened and clumpy.
  7. Sprinkle the almond crumble evenly over the top of the oatmeal. Do not press down.
  8. Cover the dish tightly with plastic wrap or a lid and refrigerate for at least 6 hours, or up to 12 hours.
  9. When ready to bake, preheat oven to 375°F (190°C). Remove dish from fridge and let sit on counter for about 10 minutes.
  10. Bake uncovered for 35-40 minutes, until top is golden brown and edges are bubbling. Center should be set but slightly jiggly.
  11. Let cool for 5-10 minutes before serving.

Notes

Do not skip the overnight rest; it ensures creamy texture. If using frozen blueberries, add them frozen to prevent discoloration. Let oatmeal rest before serving to set properly. For a vegan version, use a flax egg and plant-based milk.
