  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 pint cherry tomatoes (about 300 grams), halved
  • 1/2 cup Kalamata olives (about 75 grams), pitted and halved
  • 1 tablespoon capers, drained (optional)
  • Juice and zest of 1 medium lemon
  • 1 teaspoon dried oregano
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine halved cherry tomatoes, Kalamata olives, capers, minced garlic, lemon zest, dried oregano, and olive oil. Toss gently to coat evenly.
  3. Pat the cod fillets dry with paper towels. Lightly season with salt and pepper on both sides.
  4. Spread the tomato and olive mixture evenly in an oven-safe baking dish.
  5. Nestle the cod fillets on top of the tomato mixture, spacing them evenly. Drizzle a little more olive oil over the cod.
  6. Bake uncovered for 15 to 18 minutes, until the fish flakes easily with a fork and is opaque throughout, and the tomatoes are tender and blistered.
  7. Remove from oven, squeeze juice of half a lemon over the fish, and sprinkle with chopped parsley.
  8. Serve immediately, paired with a simple side like steamed green beans or a fresh salad.
