Sticky, caramelized honey garlic chicken thighs made in one pan in about 35 minutes. A perfect weeknight dinner with juicy bone-in skin-on chicken and a glossy, savory-sweet sauce.

Ingredients

Scale
  • 46 bone-in, skin-on chicken thighs (about 2 lbs)
  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 6 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 1 tablespoon rice vinegar
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Sliced green onions and sesame seeds for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Pat chicken thighs dry with paper towels and season generously with salt and black pepper.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat until shimmering. Place chicken skin-side down and cook undisturbed for 5-6 minutes until deep golden brown.
  3. Flip chicken using tongs and cook for another 3 minutes. Remove chicken to a plate.
  4. Reduce heat to medium. Pour off all but 1 tablespoon of rendered fat. Add minced garlic and stir constantly for about 30 seconds until fragrant.
  5. Add honey, soy sauce, and rice vinegar. Stir to combine, scraping up browned bits. Let simmer for 1-2 minutes until slightly thickened.
  6. Return chicken to the pan skin-side up, spooning some sauce over the tops. Transfer skillet to oven and bake for 15-18 minutes until internal temperature reaches 165°F (74°C).
  7. Optional: Switch oven to broil for the last 2-3 minutes for extra caramelized skin. Watch closely.
  8. Remove skillet from oven. Transfer chicken to a serving plate. Place skillet on stovetop over medium heat, add butter, and whisk until melted and glossy. Pour sauce over chicken.
  9. Garnish with green onions and sesame seeds if using. Let rest 5 minutes before serving.

Notes

Don’t skip drying the chicken for crispy skin. Watch the garlic carefully to avoid burning. Let the sauce reduce properly before baking. Use a meat thermometer for best results. Leftovers keep in the refrigerator for up to 4 days and can be frozen for up to 3 months.
