These Easy No-Bake Peanut Butter Oat Energy Bites are a quick, filling, and forgiving snack made with pantry staples. Ready in under 10 minutes, they’re perfect for meal prep, post-run refueling, or a healthy treat.

Ingredients

Scale
  • 1 cup old-fashioned rolled oats
  • ½ cup creamy peanut butter
  • ⅓ cup honey or maple syrup
  • ¼ cup mini chocolate chips
  • ¼ cup ground flaxseed or chia seeds
  • ½ teaspoon vanilla extract
  • Pinch of sea salt (optional)
  • Optional add-ins: 2 tablespoons shredded coconut, ¼ cup chopped nuts, 1 tablespoon cocoa powder, 2 tablespoons hemp hearts, ¼ cup dried fruit

Instructions

  1. Combine the dry ingredients: In a large mixing bowl, add 1 cup rolled oats, ¼ cup ground flaxseed, and a pinch of sea salt. If using any optional dry add-ins like shredded coconut or cocoa powder, add them now. Whisk together with a fork.
  2. Add the wet ingredients: Spoon in ½ cup peanut butter, ⅓ cup honey (or maple syrup), and ½ teaspoon vanilla extract. Space them out for easier mixing.
  3. Stir until fully combined: Use a rubber spatula or wooden spoon to mix everything together. Start with a folding motion, then switch to a firm stirring motion. The mixture will look crumbly at first, then come together into a cohesive, slightly sticky dough (about 1-2 minutes). If too dry, add a teaspoon of honey or a splash of milk. If too wet, add a tablespoon of oats at a time.
  4. Fold in the chocolate chips: Gently fold in ¼ cup mini chocolate chips until evenly distributed. Save a few to press onto the tops for presentation.
  5. Chill the mixture (optional but recommended): Refrigerate the bowl for 15-20 minutes to firm up the mixture for easier rolling.
  6. Roll into balls: Line a baking sheet or plate with parchment paper. Using a tablespoon or small cookie scoop, portion out the mixture and roll each portion between your palms into a smooth ball (about 1-inch). If sticky, lightly dampen your palms with water or rub a tiny drop of oil on them.
  7. Set and enjoy: Place the rolled bites on the parchment-lined sheet. Eat immediately or refrigerate for at least 30 minutes for better texture and flavor melding.

Notes

For best results, use room temperature peanut butter and stir it well if it’s natural. Chilling the mixture before rolling makes it much easier to handle. If the mixture is too dry, add a splash of milk or extra honey; if too wet, add more oats. These bites get better after a day or two in the fridge as the oats absorb moisture.
