These Easy Mini Buffalo Chicken Meatball Skewers are a quick and delicious game-day appetizer. Made with ground chicken, breadcrumbs, and buffalo sauce, they deliver all the flavor of traditional wings without the mess.

  • 1/2 cup plain breadcrumbs (or panko)
  • 1 large egg, lightly beaten
  • 1/4 cup finely diced celery
  • 1/4 cup finely diced onion (white or yellow)
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 2 tablespoons unsalted butter, melted
  • Fresh chives or green onions, chopped for garnish (optional)
  • Toothpicks or small skewers for serving

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground chicken, breadcrumbs, beaten egg, diced celery, diced onion, minced garlic, salt, and pepper. Use your hands to mix gently until just combined. Do not overmix.
  3. Roll the mixture into small meatballs, about 1 tablespoon each. You should get around 20 to 24 meatballs. Place them on the prepared baking sheet, spacing them about an inch apart.
  4. Bake for 12 to 15 minutes, or until the meatballs are cooked through and golden brown on the edges. They should reach an internal temperature of 165°F (74°C).
  5. While the meatballs bake, make the sauce. In a small saucepan over low heat, combine the buffalo wing sauce and melted butter. Stir until the butter is fully incorporated and the sauce is warm. Do not let it boil.
  6. Once the meatballs are done, transfer them to a large bowl. Pour the warm buffalo sauce over the top and gently toss until every meatball is coated.
  7. Let the meatballs rest for 2 to 3 minutes.
  8. Thread each meatball onto a toothpick or small skewer. Arrange them on a serving platter. Sprinkle with chopped chives or green onions for garnish.

Notes

Do not overmix the meatball mixture to keep them tender. Use a meat thermometer to ensure the meatballs reach 165°F. For a milder sauce, add extra butter. For extra heat, add cayenne pepper to the meatball mixture or sauce. The meatballs can be baked up to 2 days in advance and reheated before serving.
