  • 4 tilapia fillets (6 oz / 170 g each), fresh or thawed
  • 12 oz (340 g) fresh green beans, trimmed
  • 4 tablespoons (57 g) unsalted butter, melted
  • Juice of 1 large lemon (about 3 tablespoons / 45 ml)
  • 3 cloves garlic, finely minced
  • Salt and black pepper, to taste
  • 1 teaspoon dried thyme or 1 tablespoon fresh parsley, chopped (optional)
  • 1 tablespoon (15 ml) olive oil, for tossing the green beans

Instructions

  1. Preheat the oven to 400°F (200°C) and allow it to fully preheat for about 10 minutes.
  2. Trim the ends off the green beans and rinse well. In a mixing bowl, toss the green beans with olive oil, salt, and pepper until evenly coated.
  3. Line a rimmed baking sheet with parchment paper or a silicone baking mat. Spread the green beans out on one side of the pan in a single layer.
  4. In a small bowl, combine melted butter, fresh lemon juice, minced garlic, and dried thyme if using. Stir well to blend.
  5. Pat the tilapia fillets dry with paper towels. Arrange the fillets on the other side of the sheet pan, leaving space between each piece.
  6. Generously spoon the lemon butter sauce over each fillet and drizzle some onto the green beans. Sprinkle salt and freshly ground black pepper over the fish and vegetables.
  7. Roast in the preheated oven for 12-15 minutes until the tilapia is opaque and flakes easily, and the green beans are tender-crisp. Optionally broil for 1-2 minutes for more caramelization, watching closely.
  8. Remove from oven, sprinkle chopped fresh parsley if desired, and serve immediately while warm.

Notes

Patting the fish dry before cooking helps the sauce stick and prevents steaming. Avoid overcrowding the pan to ensure even roasting. Fresh lemon juice is preferred over bottled for best flavor. Check thinner fillets at 10 minutes to avoid overcooking. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days and reheated gently in a low oven.
