  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 425°F (220°C) and place a baking sheet inside to warm.
  2. Lightly butter the insides of two 6 oz ramekins and dust with cocoa powder, tapping out excess.
  3. Chop the chocolate into small pieces and melt with butter in a microwave-safe bowl in 20-second intervals, stirring until smooth. Alternatively, melt using a double boiler. Let cool slightly.
  4. In a separate bowl, whisk eggs and sugar until pale and slightly thickened (2-3 minutes by hand or 1 minute with mixer).
  5. Stir in vanilla extract and salt.
  6. Slowly fold the melted chocolate mixture into the eggs, mixing gently to keep airiness.
  7. Sift flour over the batter and fold gently until just combined, avoiding overmixing.
  8. Divide batter evenly between the prepared ramekins, filling about 3/4 full.
  9. Bake on the preheated baking sheet for 12-14 minutes until edges are firm and center is soft and jiggly.
  10. Remove from oven and let rest for 1 minute.
  11. Run a knife around the edges to loosen and invert onto small plates.
  12. Serve immediately, dusted with powdered sugar and topped with fresh berries or a scoop of vanilla ice cream.
