  • 2 boneless, skinless chicken breasts (about 68 oz / 170225 g each), pounded to even thickness
  • 4 cloves garlic, minced
  • 3 tablespoons honey
  • 2 tablespoons soy sauce (low-sodium recommended)
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons olive oil (divided: 1 tbsp for chicken, 1 tbsp for broccoli)
  • 1 large head broccoli, cut into florets
  • Salt and freshly ground black pepper, to taste
  • Optional: red pepper flakes for heat
  • Optional: sesame seeds for garnish

Instructions

  1. Pound the chicken breasts to an even thickness of about ¾ inch (2 cm). Pat dry and season both sides lightly with salt and pepper.
  2. In a small bowl, combine honey, minced garlic, soy sauce, and apple cider vinegar. Stir until well mixed to make the glaze.
  3. Preheat oven to 425°F (220°C). Toss broccoli florets with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet in a single layer and roast for 15-20 minutes, turning halfway through, until edges are browned and crisp.
  4. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add chicken breasts and cook for about 5 minutes on one side without moving to develop a golden crust.
  5. Flip the chicken breasts and immediately pour the honey garlic glaze over them. Spoon glaze over chicken as it cooks for another 5-7 minutes until glaze thickens and chicken reaches an internal temperature of 165°F (74°C).
  6. Remove chicken from skillet and let rest for 5 minutes to lock in juices.
  7. Serve the glazed chicken breasts alongside the roasted broccoli, optionally garnished with sesame seeds or red pepper flakes.

Notes

If the glaze thickens too much while cooking, add a splash of water to loosen it. Keep the heat medium to prevent burning the honey glaze. Let the chicken rest after cooking to keep it juicy. Roasting broccoli at high heat brings out a smoky sweetness. For gluten-free, substitute soy sauce with tamari or coconut aminos. Optional additions include red pepper flakes for heat or sesame seeds for garnish.
