Instructions

  1. Prepare the rice: If using leftover rice, let it come to room temperature. If making fresh, cook 1 cup of sushi rice with 1.25 cups of water. Once cooked, let it cool for 10 minutes. In a small bowl, mix 1 tablespoon rice vinegar, 1 teaspoon sugar, and a pinch of salt. Gently fold this into the rice using a wooden spoon or spatula. Be careful not to mash the grains. Set aside.
  2. Set up your work station: Lay a sheet of nori on your cutting board or bamboo mat with the shiny side facing down. The rough side should face up—that is where the rice sticks. Keep a small bowl of water nearby for your fingers.
  3. Spread the rice: Wet your hands with water to prevent sticking. Grab a handful of seasoned rice (about half a cup) and spread it evenly over the nori, leaving a 1-inch strip at the top edge uncovered. The rice layer should be thin—about 1/4 inch thick. Press gently but firmly. If the rice sticks to your fingers, dip them in water again.
  4. Lay the fillings: Place 2 slices of ham side by side across the center of the rice. Lay 1 slice of cheese (cut into strips) on top of the ham. If adding cucumber or avocado, place them next to the cheese. Do not overfill.
  5. Roll it up: Starting from the bottom edge (the side closest to you), lift the nori and fold it over the fillings. Use your fingers to hold the fillings in place while you tuck the edge under. Apply gentle, even pressure as you roll forward. When you reach the uncovered strip at the top, wet it lightly with water using your finger—this acts as glue to seal the roll.
  6. Seal and rest: Once the roll is complete, place it seam-side down for a minute. This helps the seal hold. Repeat with the remaining nori sheets and fillings.
  7. Slice the rolls: Using a sharp knife, cut each roll into 6-8 pieces. For clean cuts, wipe the knife with a damp cloth between slices. Do not saw back and forth—use a single smooth motion.
  8. Serve or pack: Arrange the slices on a plate or pack them tightly in a lunchbox. They can be served at room temperature or slightly chilled.
