  • 1/2 cup buffalo sauce
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup crumbled blue cheese (optional)
  • 2 tablespoons ranch dressing
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small cubes
  • 2/3 cup cold buttermilk
  • 1 egg, beaten
  • Sesame seeds or poppy seeds (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set it aside.
  2. Make the filling: In a medium bowl, combine the softened cream cheese, shredded chicken, buffalo sauce, cheddar cheese, blue cheese (if using), ranch dressing, garlic powder, and onion powder. Mix until well combined and creamy. Cover and set aside.
  3. Make the dough: In a large bowl, whisk together the flour, baking powder, and salt. Add the cold butter cubes and use a pastry cutter or your fingers to work the butter into the flour until it looks like coarse sand with some pea-sized butter pieces remaining (about 2-3 minutes).
  4. Add the buttermilk: Pour the cold buttermilk into the flour mixture and stir with a fork until just combined. Turn the shaggy dough out onto a lightly floured surface and gently bring it together with your hands. Pat it into a rectangle about 1-inch thick.
  5. Roll and cut: Roll the dough out to about 1/4-inch thickness. Use a 2-inch round cutter to cut out circles. Gather scraps, press together, and reroll once more to cut additional circles (about 20-24 total).
  6. Fill and shape: Place about 1 tablespoon of filling in the center of each dough circle. Gently stretch the dough over the filling and pinch the edges together to form a football shape. Place each football seam-side down on the prepared baking sheet, leaving about 2 inches between them.
  7. Egg wash and decorate: Brush the tops of each football with the beaten egg. If using, sprinkle sesame seeds or poppy seeds on top.
  8. Bake: Bake for 15-18 minutes, or until golden brown and puffed up. Let cool on the baking sheet for about 5 minutes before serving.

Notes

Keep all ingredients cold for flaky dough. Do not overfill to prevent leaks. For make-ahead, assemble and refrigerate up to 4 hours before baking, or freeze unbaked for up to 3 months. Reheat in a 350°F oven for 5-7 minutes.
