These easy foil packet breakfast burritos are perfect for camping or quick breakfasts at home, combining fluffy eggs, savory sausage, melty cheese, and veggies wrapped in tortillas and cooked over a campfire or grill.

  • 6 large eggs (room temperature)
  • 8 oz (225 g) breakfast sausage, cooked and crumbled
  • 1 cup (100 g) shredded cheddar cheese
  • 6 large flour tortillas (10-inch / 25 cm)
  • 1 cup diced bell peppers (any color)
  • ½ cup diced onion (yellow or white)
  • Salt and pepper to taste
  • 1 tbsp (15 ml) olive oil
  • Optional hot sauce or salsa

Instructions

  1. Heat 1 tbsp olive oil in a skillet over medium heat. Add 8 oz breakfast sausage, breaking it up with a spatula. Cook for 6-8 minutes until browned and cooked through. Transfer to a plate lined with paper towels to drain excess fat.
  2. In the same skillet, add diced bell peppers and onions. Cook for 4-5 minutes until softened but still slightly crisp. Season lightly with salt and pepper. Remove from heat.
  3. In a bowl, crack 6 large eggs and whisk until combined. Season with salt and pepper.
  4. Add cooked sausage and sautéed veggies to the beaten eggs. Stir in 1 cup shredded cheddar cheese. Mix well.
  5. Tear off six sheets of heavy-duty aluminum foil, about 12×12 inches each. Lay out one tortilla on each sheet. Spoon the egg mixture evenly onto the center of each tortilla.
  6. Fold the sides of the foil up snugly around the tortilla, then roll the tortilla edges over the filling to form a burrito shape. Seal the foil tightly to keep everything contained.
  7. Place foil packets on hot campfire coals or on a grill set to medium heat. Cook for 15-20 minutes, turning packets occasionally. Check one packet at 15 minutes to avoid overcooking. The eggs should be set and the cheese melted.
  8. Carefully remove packets with tongs or heat-resistant gloves. Let cool for a minute or two, then unwrap and enjoy. Add hot sauce or salsa if desired.

Notes

Do not overfill the packets to avoid tearing tortillas. Use heavy-duty foil or double wrap to prevent tearing. Pre-cook sausage and veggies to ensure even cooking. Turn packets regularly to avoid burning. Let packets rest before unwrapping to avoid steam burns. Can be baked in oven at 375°F (190°C) for 20-25 minutes as an alternative to campfire cooking. Assemble packets ahead and refrigerate overnight; add extra cooking time when heating.
