  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 can (15 oz) fire-roasted diced tomatoes
  • 1 can (15 oz) tomato sauce (no-salt-added version)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 2 cups low-sodium chicken broth
  • 1 packet (1 oz) taco seasoning
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • Salt and black pepper to taste
  • Juice of 1 lime
  • Optional toppings: shredded cheese, sour cream, avocado, cilantro, tortilla chips, sliced jalapeños

Instructions

  1. Brown the ground turkey (optional but recommended): Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a wooden spoon, until it’s no longer pink—about 5-7 minutes. Season with a pinch of salt and pepper.
  2. Sauté the aromatics: Push the turkey to one side of the skillet. Add the diced onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for 30 seconds until fragrant.
  3. Transfer to the slow cooker: Dump the browned turkey, onions, and garlic into your 6-quart slow cooker.
  4. Add the canned goods: Pour in the fire-roasted diced tomatoes (with their juices), tomato sauce, drained black beans, and drained corn.
  5. Add the broth and seasonings: Pour in the chicken broth. Sprinkle the taco seasoning, cumin, and chili powder over the top. Give everything a good stir to combine.
  6. Cook low and slow: Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  7. Finish with lime juice: Just before serving, stir in the juice of 1 lime. Taste and adjust seasoning.

For the best texture, look for ground turkey that’s not too lean—93/7 is the sweet spot. Fire-roasted tomatoes are worth seeking out; they add a subtle smokiness. Don’t skip the lime juice at the end. For a freezer-friendly version, follow steps 1-5, let cool completely, portion into freezer-safe bags, and freeze flat for up to 3 months.
