Easy Cozy Apple Cider Baked Donuts with Cinnamon Sugar

These baked apple cider donuts are tender, packed with concentrated apple flavor, and coated in a crunchy cinnamon sugar shell. They come together in under 30 minutes with no yeast or frying, making them the perfect fall treat.

  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1 large egg, room temperature
  • ½ cup buttermilk, room temperature
  • ¼ cup unsalted butter, melted and slightly cooled
  • ¼ cup apple cider reduction
  • 1 teaspoon vanilla extract
  • ½ cup granulated sugar (for coating)
  • 1 ½ teaspoons ground cinnamon (for coating)
  • ¼ cup unsalted butter, melted (for coating)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 6-cavity donut pan with non-stick spray or melted butter.
  2. Pour 1 cup apple cider into a small saucepan. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for 12-15 minutes, stirring occasionally, until reduced to about ¼ cup and syrupy. Remove from heat and let cool.
  3. In a large bowl, whisk together flour, ¾ cup sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In a separate medium bowl, whisk together egg, buttermilk, ¼ cup melted butter, ¼ cup apple cider reduction, and vanilla extract until smooth.
  5. Pour wet ingredients into dry ingredients. Stir gently with a spatula until just combined (a few lumps are fine). Do not overmix.
  6. Transfer batter to a piping bag or Ziploc bag with the corner snipped off. Pipe batter into the prepared donut pan, filling each cavity about ⅔ to ¾ full.
  7. Bake for 9-11 minutes, until golden brown and a toothpick inserted into the thickest part comes out clean. Let cool in pan for 2-3 minutes, then turn out onto a cooling rack.
  8. While donuts cool, melt ¼ cup butter in a small bowl. In a shallow bowl, whisk together ½ cup sugar and 1 ½ teaspoons cinnamon.
  9. Working one at a time, brush each warm donut with melted butter, then roll in cinnamon sugar mixture to coat evenly. Place on cooling rack.
  10. Serve immediately while warm.

Notes

For best results, use room temperature egg and buttermilk. Coat donuts while still warm so the cinnamon sugar sticks. Don’t overmix the batter to avoid tough donuts. The apple cider reduction can be made up to a week ahead and stored in the fridge.
