Easy Apple Cider Mimosa with Cinnamon Sugar Rim

A quick and easy fall-inspired mimosa made with crisp apple cider, dry prosecco, and a warm cinnamon sugar rim. Perfect for brunch, holidays, or any occasion that calls for a celebratory drink.

  • 1 tablespoon ground cinnamon
  • 1 teaspoon honey or maple syrup
  • 4 ounces apple cider, chilled
  • 4 ounces prosecco or champagne, chilled
  • Ice (optional)
  • Apple slices or cinnamon sticks for garnish (optional)

Instructions

  1. In a small shallow dish, combine 2 tablespoons granulated sugar and 1 tablespoon ground cinnamon. Whisk together until evenly mixed.
  2. Ensure the rim of a champagne flute or wine glass is completely dry. Using a pastry brush or small spoon, apply a thin, even layer of honey or maple syrup around the outer edge of the rim.
  3. Hold the glass at a 45-degree angle and dip the rim into the cinnamon sugar mixture, rotating slowly until fully coated. Tap off excess and let set for about 30 seconds.
  4. Pour 4 ounces of chilled apple cider into the prepared glass.
  5. Slowly pour 4 ounces of chilled dry prosecco or champagne down the side of the glass to preserve bubbles.
  6. Stir gently once or twice with a long spoon or chopstick to combine.
  7. Garnish with an apple slice or cinnamon stick if desired. Serve immediately.

Notes

Chill all ingredients thoroughly before assembling. Use a dry brut prosecco or champagne to balance the sweetness of the apple cider. The cinnamon sugar mixture can be made in bulk and stored in an airtight container for up to 3 months. For a non-alcoholic version, substitute sparkling apple cider or sparkling water.
