  • ¼ cup (30g) pecans, roughly chopped and toasted in maple syrup

Instructions

  1. Toast the Maple Pecans (10 minutes): Heat a small skillet over medium heat. Add the chopped pecans and drizzle with 1 tablespoon of maple syrup. Stir constantly for about 3-5 minutes until the pecans are fragrant and sticky but not burnt. Transfer to a plate lined with parchment paper to cool and harden slightly.
  2. Mix the Oats Base (5 minutes): In your chosen jar or bowl, combine ½ cup rolled oats, ½ cup milk, ¼ cup plain Greek yogurt, and 1 tablespoon maple syrup. Stir gently to mix all ingredients evenly.
  3. Refrigerate Overnight (at least 6 hours): Cover the jar or bowl with a lid or plastic wrap. Pop it into the fridge and let it soak overnight or at least 6 hours to soften the oats and absorb flavors.
  4. Assemble and Serve (2 minutes): The next morning, give the oats a quick stir. Top with the cooled maple pecans for a crunchy contrast. Add a splash of milk if you prefer a looser consistency. Optionally, add fresh berries, sliced banana, or a sprinkle of cinnamon.

Notes

Toast pecans slowly over medium heat to avoid burning; stir often. Use old-fashioned rolled oats for best texture.
