  • 1 packet taco seasoning (about 2 tablespoons if using homemade)
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) diced tomatoes with green chiles (undrained)
  • 2 cups low-sodium beef broth

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat, breaking it apart with a spoon, until no longer pink (6-8 minutes). Drain excess grease if needed.
  2. Sprinkle the taco seasoning over the cooked beef and stir to coat. Cook for another minute until fragrant.
  3. Transfer the seasoned beef to a crockpot (4-quart or larger).
  4. Add the rinsed black beans and the can of diced tomatoes with green chiles (undrained). Stir to combine.
  5. Pour in the beef broth and stir again, ensuring nothing is stuck to the bottom.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours.

Notes

For a thicker soup, mash some black beans against the side of the crockpot before serving. For a creamier version, stir in 4 ounces of cream cheese during the last 30 minutes of cooking. This soup freezes well for up to 3 months.
