A simple, juicy, and tender slow cooker chicken recipe that requires only three ingredients: chicken breasts, salsa, and taco seasoning. Perfect for busy weeknights and meal prep.

Ingredients

Scale
  • 2 to 3 pounds boneless, skinless chicken breasts
  • 1 jar (16 ounces) medium or mild salsa
  • 1 packet taco seasoning (low-sodium recommended)

Instructions

  1. Rinse chicken breasts under cold water and pat dry. Trim any excess fat or silver skin. If breasts are very large, cut them in half horizontally to ensure even cooking.
  2. Place the prepared chicken in the bottom of a 4-quart or 6-quart slow cooker.
  3. Pour the entire jar of salsa over the chicken, ensuring it is well-covered.
  4. Sprinkle the entire packet of taco seasoning over the chicken and salsa. Do not stir yet.
  5. Cover the slow cooker and cook on low for 6 to 7 hours, or on high for 3 to 4 hours.
  6. Check that the chicken is opaque throughout and reaches an internal temperature of 165°F.
  7. Use two forks to shred the chicken directly in the pot into bite-sized pieces.
  8. Stir the shredded chicken into the salsa sauce and let it sit for 5 minutes to meld flavors.
  9. Taste and adjust seasoning with salt or lime juice if needed. Serve hot.

Notes

Do not overcrowd the slow cooker; ensure chicken fits in a single or loose double layer. Avoid lifting the lid during the first few hours of cooking to maintain heat. If the sauce is too thin, leave the lid off for the last 30 minutes to reduce. Chicken thighs can be substituted for breasts, adjusting cooking time slightly. For a spicy kick, use hot salsa or add jalapeños. For a cheesy twist, stir in shredded cheese during the last 30 minutes.
