Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
  2. Shred the zucchini using a box grater or food processor. Place shredded zucchini in a clean kitchen towel and wring out as much moisture as possible.
  3. Melt the dark chocolate in a microwave-safe bowl in 30-second bursts, stirring until smooth. Set aside to cool slightly.
  4. In a large bowl, sift together flour, cocoa powder, baking powder, and salt.
  5. In another bowl, whisk eggs and sugar until slightly fluffy and pale, about 2 minutes. Add oil, vanilla extract, and melted chocolate; stir gently to combine.
