Candy Corn Popcorn Bark - featured image

A simple, no-bake Halloween treat combining buttery popcorn, sweet chocolate, and tangy candy corn. This quick recipe is perfect for busy weeknights or festive parties.

Ingredients

Scale
  • 8 cups popped popcorn (plain, air-popped recommended)
  • 2 cups white chocolate chips
  • 1 cup milk chocolate chips (optional)
  • 2 tablespoons unsalted butter
  • 1 cup candy corn
  • 1 teaspoon vanilla extract
  • Pinch of flaky sea salt
  • Grated white chocolate (optional, for decoration)

Instructions

  1. Prepare the popcorn by removing unpopped kernels if desired, then place 8 cups of popped popcorn in a large mixing bowl.
  2. In a microwave-safe bowl, combine white chocolate chips, milk chocolate chips (if using), and butter. Microwave on high for 30 seconds, stir, then continue in 15-second intervals, stirring after each, until smooth and glossy.
  3. Add vanilla extract to the melted chocolate and stir to combine.
  4. Pour the melted chocolate over the popcorn and gently fold with a silicone spatula until every piece is coated. Add candy corn and fold gently to adhere.
  5. Line a 13×9 inch baking sheet with parchment paper. Pour the mixture onto the sheet and spread into an even layer about 1/2 inch thick.
  6. Sprinkle a pinch of flaky sea salt over the top. Press extra candy corn into the surface for decoration if desired.
  7. Chill in the refrigerator for at least 30 minutes or in the freezer for 15 minutes until the chocolate is completely set.
  8. Lift the parchment paper out of the pan and break the bark into irregular chunks. Store in an airtight container.

Notes

Ensure all equipment is completely dry to prevent chocolate from seizing. If chocolate is too thick, add a teaspoon of coconut oil or vegetable shortening. For a dairy-free version, use coconut oil and dairy-free chocolate chips. For a gluten-free version, ensure all ingredients are certified gluten-free.
