These brownies combine a rich, fudgy chocolate base with a salted caramel swirl and crunchy pretzel topping for a perfect balance of sweet and salty flavors.

  • ½ cup (113 g) unsalted butter, melted
  • 1 cup (200 g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • ¾ cup (90 g) all-purpose flour
  • ½ cup (50 g) unsweetened cocoa powder (preferably Dutch-processed)
  • ¼ teaspoon salt
  • ½ cup (120 ml) salted caramel sauce
  • 1 cup (about 50 g) mini pretzels, roughly crushed
  • Pinch of coarse sea salt

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a medium bowl, whisk together the melted butter and granulated sugar until well combined and glossy, about 1-2 minutes.
  3. Add the eggs one at a time, whisking after each addition, then stir in the vanilla extract.
  4. In another bowl, sift together the flour, cocoa powder, and salt.
  5. Gradually fold the dry ingredients into the wet mixture using a rubber spatula. Stop when no streaks of flour remain but the batter is still thick and fudgy.
  6. Pour half the batter into the prepared pan and spread evenly.
  7. Dollop spoonfuls of salted caramel sauce over the batter and swirl gently with a knife or skewer to create ribbons.
  8. Carefully spoon the remaining batter over the caramel layer and spread evenly.
  9. Sprinkle crushed pretzels generously on top, pressing lightly so they stick but don’t sink. Finish with a pinch of coarse sea salt.
  10. Bake for 25-30 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs.
  11. Cool completely in the pan on a cooling rack before lifting out and slicing.

Notes

Use room temperature eggs to avoid curdling. Chill caramel if too runny before swirling. Avoid overmixing batter to maintain fudgy texture. Cool brownies completely before slicing for best results. For gluten-free, substitute almond flour and gluten-free pretzels. For dairy-free, use coconut oil and coconut milk-based caramel sauce.
