  • 4 cups broccoli florets (about 10.5 oz)
  • 3 cloves garlic, minced
  • 1/3 cup freshly grated parmesan cheese (about 1 oz)
  • 2 tablespoons olive oil, divided
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Red pepper flakes (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine parmesan, minced garlic, 2 tablespoons olive oil, lemon juice, Italian seasoning, salt, and black pepper to form a thick paste.
  3. Pat the chicken thighs dry with paper towels. Rub the garlic parmesan mixture all over the chicken thighs, including under the skin if possible.
  4. Toss broccoli florets with 1 tablespoon olive oil, a pinch of salt, black pepper, and red pepper flakes if using. Spread broccoli on one side of a sheet pan.
  5. Arrange chicken thighs skin-side up on the other side of the sheet pan, leaving space between pieces.
  6. Roast in the oven for 25-30 minutes. Halfway through, gently toss the broccoli for even browning, but keep chicken skin-side up.
  7. Check that chicken skin is golden and crispy and internal temperature reaches 165°F (74°C). Broccoli should be tender with slightly charred edges.
  8. Optional: Broil for 2-3 minutes for extra crispiness, watching carefully to avoid burning.
  9. Let the chicken rest for 5 minutes before serving to redistribute juices.
  10. Serve warm with a wedge of lemon if desired.
