A crispy, spiced popcorn mix that balances sweet, salty, and spiced flavors without being overly greasy. This easy treat uses an egg white wash for perfect coating and bakes at a low temperature for maximum crunch.

Ingredients

Scale
  • 1 cup (200g) yellow popcorn kernels
  • 3 tablespoons vegetable oil
  • 4 tablespoons unsalted butter, softened
  • 1/2 cup (100g) packed brown sugar
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon fine sea salt
  • 1 large egg white, beaten lightly
  • 1 teaspoon pure vanilla extract
  • Optional: 1/2 cup mini chocolate chips or chopped pecans

Instructions

  1. Pop the corn: Heat vegetable oil in a large pot over medium-high heat. Add three test kernels; when they pop, remove them and add the rest of the kernels in a single layer. Cover and shake occasionally until popping slows to one pop every two seconds (about 3-5 minutes). Pour into a large bowl and discard unpopped kernels.
  2. Make the coating: In a small saucepan, combine softened butter, brown sugar, pumpkin pie spice, cinnamon, nutmeg, and salt. Heat over medium-low heat, stirring constantly until the sugar melts into a smooth syrup (2-3 minutes). Remove from heat.
  3. Whisk the egg white: In a small bowl, beat the egg white until frothy. Stir in the vanilla extract.
  4. Combine: Pour the warm sugar-spice mixture over the hot popcorn and toss to coat. Drizzle the egg white mixture over the popcorn while tossing continuously for about 2 minutes until the popcorn looks coated and glossy.
  5. Spread and bake: Preheat oven to 200°F (95°C). Spread popcorn in a single layer on a parchment-lined baking sheet. Bake for 20 minutes, stirring halfway through to ensure even crisping.
  6. Cool and break: Let the popcorn cool completely on the tray. Once cool, break any large clusters apart with your hands.

Notes

Ensure the sugar mixture does not boil vigorously to avoid hard candy texture. The oven step is crucial for crispiness; air-drying results in a sticky mess. If the coating is too thick, use less egg white. Store in an airtight container with a slice of bread to absorb moisture in humid weather. For dairy-free, swap butter for coconut oil.
