A simple yet elegant dinner featuring bone-in pork chops seared to a crispy golden brown and finished with a sticky, sweet-tart apple cider glaze. This recipe balances savory crunch with bright flavor in under 25 minutes.

Ingredients

Scale
  • 4 bone-in, center-cut pork chops (1 to 1.5 inches thick)
  • 1 cup all-purpose flour (or gluten-free blend)
  • 2 large eggs, whisked with 1 tablespoon water
  • 2 cups dry or semi-sweet apple cider
  • 2 tablespoons unsalted butter
  • 1 tablespoon honey
  • 3 cloves garlic, minced
  • 1 teaspoon dry thyme
  • 1/4 cup vegetable oil
  • Kosher salt and black pepper, to taste

Instructions

  1. Pat pork chops dry with paper towels and season generously with salt and pepper. Let sit at room temperature for 15 minutes.
  2. Set up a dredging station: whisk eggs and water in one shallow bowl, and place flour with a pinch of salt in another.
  3. Dredge each chop in the egg wash, then press firmly into the flour to coat all sides. Shake off excess flour.
  4. Heat vegetable oil in a heavy-bottomed skillet (cast iron or stainless steel) over medium-high heat until shimmering.
  5. Sear chops in the pan without moving them for 3-4 minutes until a deep golden-brown crust forms.
  6. Flip chops and cook for another 3-4 minutes. If thick, reduce heat to medium and cook for 2 more minutes until internal temperature reaches 145°F (63°C).
  7. Transfer chops to a plate and tent loosely with foil to rest.
  8. Reduce heat to medium in the same pan. Add butter and garlic, cooking for 30 seconds until fragrant.
  9. Pour in apple cider and honey, scraping up browned bits from the bottom of the pan.
  10. Simmer the mixture for 5-7 minutes until it thickens enough to coat the back of a spoon. Stir in thyme.
  11. Return rested chops to the pan for 30 seconds to warm through and coat in sauce. Serve immediately with extra glaze.

Notes

Do not overcrowd the pan to ensure a proper sear rather than steaming. Resting the meat is crucial for juiciness. For the glaze, maintain a gentle simmer to prevent bitterness. If chops are very thick, finish in a 400°F oven for 5-7 minutes after searing.
