  • 1 clove garlic, minced
  • ½ tsp salt
  • ¼ tsp black pepper
  • 34 tbsp olive oil for frying
  • Optional: 2 tbsp fresh parsley or basil, chopped

Instructions

  1. Grate the zucchinis using a box grater or food processor with a shredding blade.
  2. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible.
  3. In a large mixing bowl, combine the squeezed zucchini, grated Parmesan, beaten eggs, flour, minced garlic, lemon zest, salt, pepper, and optional herbs. Stir gently until just combined.
  4. Heat 3-4 tablespoons of olive oil in a non-stick or cast iron skillet over medium heat until shimmering but not smoking.
  5. Scoop heaping tablespoons of batter and flatten into patties about 2-3 inches wide.
  6. Place patties carefully into the hot oil without overcrowding the pan.
  7. Cook fritters for 3-4 minutes per side until golden brown and crispy, flipping gently with a spatula or slotted spoon.
  8. Transfer cooked fritters to a paper towel-lined plate to drain excess oil.
