A quick and easy side dish featuring sautéed green beans in a rich cheddar cream sauce, topped with crispy fried onions for the perfect balance of creamy and crunchy textures.

Ingredients

Scale
  • 4 cups green beans (fresh or frozen)
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded sharp cheddar cheese
  • 1.5 cups crispy fried onions (store-bought)
  • 1 tablespoon bacon grease (optional)

Instructions

  1. Prep the green beans: If using fresh, trim ends and wash. If using frozen, thaw and pat very dry. You need about 4 cups of prepared beans.
  2. Sauté the beans: Heat 1 tablespoon of butter in a large skillet over medium-high heat. Add beans in a single layer and let sit for 2 minutes to brown. Stir and cook for 3-4 minutes until tender-crisp. Remove beans and set aside.
  3. Make the roux: In the same skillet, melt another tablespoon of butter. Sprinkle in flour and whisk constantly for 1 minute until it smells nutty.
  4. Create the sauce: Slowly pour in heavy cream while whisking continuously to prevent lumps. Add garlic powder, salt, and pepper. Stir until the mixture thickens and bubbles gently.
  5. Combine and melt: Return green beans to the skillet and stir to coat in sauce. Remove from heat and stir in cheddar cheese until fully melted and smooth.
  6. Add the crunch: Transfer to a serving dish and sprinkle crispy fried onions generously over the top. Serve immediately.

Notes

Do not overcook the green beans; sautéing them first preserves texture. Grate your own cheese to ensure smooth melting. Add fried onions only at the end to maintain crunch. For gluten-free, swap flour for a 1:1 gluten-free blend or cornstarch. For dairy-free, use coconut cream and vegan cheese.
