A quick and easy Halloween appetizer featuring a creamy cheddar and salsa base topped with crispy crushed tortilla ‘dirt’. This crowd-pleasing dip is perfect for parties and requires minimal ingredients.

  • 2 cups sharp cheddar cheese, shredded
  • 1 cup full-fat sour cream
  • 1 cup mild salsa
  • 1 bag (12-15) hard-shell corn tortillas
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 23 stalks green onions, chopped

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Break hard-shell corn tortillas into quarters and place 6-8 at a time into large resealable plastic bags. Crush into coarse crumbs using a rolling pin or heavy pan. Repeat with remaining tortillas to yield 2-3 cups of crumbs. Set aside half of the crumbs.
  3. In a mixing bowl, combine shredded cheddar cheese, sour cream, salsa, garlic powder, onion powder, and chili powder. Stir until well combined.
  4. Pour the cheese mixture into a 9×13 inch baking dish and spread evenly.
  5. Sprinkle half of the crushed tortilla crumbs over the cheese mixture and press down gently.
  6. Bake for 15-20 minutes until cheese is melted and bubbling.
  7. Remove from oven and immediately sprinkle the remaining crushed tortilla crumbs over the top to create the ‘graveyard dirt’ effect.
  8. Let cool for 5 minutes, then garnish with chopped green onions. Serve immediately.

Notes

For best results, use full-fat dairy for a creamier texture. If using fresh salsa, drain excess liquid to prevent a soupy dip. Add the final layer of tortilla crumbs and green onions after baking to maintain crunch and color. This recipe is naturally gluten-free if using certified gluten-free salsa and spices.
