Ingredients

Scale
  • 1 sheet puff pastry (thawed)
  • 2 tablespoons unsalted butter
  • 1 yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups chicken stock (low-sodium)
  • 1/2 cup heavy cream
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh thyme leaves (or 1 tsp dried)
  • Salt and black pepper to taste
  • 3 cups shredded cooked chicken (rotisserie recommended)
  • 1 cup frozen peas
  • 1 large egg beaten with a splash of milk (for egg wash)
  • Butter for brushing top

Instructions

  1. Preheat oven to 400°F (200°C). Thaw puff pastry on the counter for 30-40 minutes until pliable but cold.
  2. Melt 2 tablespoons of butter in a large skillet over medium heat. Add diced onion and a pinch of salt; cook for 3-4 minutes until translucent.
  3. Add minced garlic and cook for 30 seconds until fragrant.
  4. Sprinkle flour over the onions and garlic. Stir constantly for 1-2 minutes to create a roux.
  5. Slowly whisk in chicken stock, then stir in heavy cream. Simmer for 2-3 minutes until the sauce thickens.
  6. Stir in Dijon mustard, thyme, salt, and pepper. Remove from heat.
  7. Fold in shredded chicken and frozen peas. Taste and adjust seasoning.
  8. Transfer filling to a 9-inch pie dish or deep baking dish.
  9. Roll out puff pastry and place over the filling. Trim excess, leaving an inch of overhang. Tuck edges under and crimp with a fork.
  10. Brush the top generously with egg wash. Cut 2-3 slits in the top for steam to escape.
  11. Bake for 25-30 minutes until pastry is puffed and deep golden brown.
  12. Let cool for 5-10 minutes before slicing and serving.

Notes

Keep the pastry cold until baking for maximum flakiness. If the top browns too quickly, tent with aluminum foil. Ensure the filling is thick to prevent a soggy bottom. Can be assembled up to 24 hours in advance and refrigerated.
