These cookies feature a satisfying crunch on the edges and a soft, chewy center, enhanced by the nutty depth of browned butter, pure maple syrup, and toasted pecans.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 1 cup packed brown sugar
  • ¼ cup pure maple syrup (Grade B or dark amber)
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup vanilla wafers, crushed
  • 1 ½ cups pecan halves, toasted

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
  2. Melt butter in a light-colored saucepan over medium heat, stirring constantly until it foams, settles, and brown bits form at the bottom with a nutty aroma (5-7 minutes).
  3. Pour browned butter into a heat-proof bowl and let cool for 10-15 minutes until warm but not hot.
  4. Toast pecans on a dry baking sheet for 5-7 minutes, then let cool and chop roughly.
  5. In a large mixing bowl, whisk together cooled brown butter, granulated sugar, and brown sugar until the mixture resembles wet sand.
  6. Add the egg and vanilla extract, whisking until smooth.
  7. In a separate bowl, whisk together flour, baking soda, and salt.
  8. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  9. Fold in crushed vanilla wafers and toasted pecans.
  10. Scoop 2-tablespoon portions of dough onto prepared baking sheets, spacing them 2 inches apart.
  11. Optionally sprinkle with flaky sea salt.
  12. Bake for 10-12 minutes until edges are golden brown and centers look slightly soft.
  13. Let cookies cool on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.

Notes

Ensure brown butter is cooled before mixing to prevent melting the sugar. Do not overmix the dough to avoid tough cookies. Toasting the pecans enhances flavor. Cookies taste better after sitting for a day as flavors meld.
