Instructions

  1. Trim any excess fat from the chicken thighs and pat dry with paper towels.
  2. In a mixing bowl, combine soy sauce, garlic powder, onion powder, smoked paprika, black pepper, and a pinch of salt.
  3. Toss the chicken pieces in the seasoning mixture until evenly coated and marinate for at least 10 minutes.
  4. While the chicken marinates, whisk together mayonnaise, ketchup, rice vinegar, garlic powder, smoked paprika, sugar, and cayenne pepper (if using) in a small bowl.
  5. Add water one teaspoon at a time until the sauce reaches a creamy but pourable consistency. Cover and refrigerate until ready to serve.
  6. Preheat the Blackstone griddle to medium-high heat (around 375°F). Add vegetable oil and spread evenly.
