Instructions

  1. Pour 2 cups of apple cider into a medium saucepan. Bring to a boil over medium-high heat, then reduce heat to low and simmer until reduced by half (1 cup syrup). Let cool completely.
  2. In a large mixing bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, whisk melted butter, 1/2 cup granulated sugar, applesauce, eggs, vanilla extract, and the cooled reduced cider until smooth.
