Instructions

  1. Make the cheese mixture: In a large mixing bowl, combine the softened cream cheese, shredded cheddar, Parmesan, garlic powder, onion powder, smoked paprika, salt, pepper, and chives if using. Mix until fully incorporated.
  2. Chill the mixture: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  3. Form the football shapes: Once the mixture is firm, use a cookie scoop or tablespoon to portion out even amounts. Roll each portion into a ball, then gently shape it into a football (oval) shape. Place each shaped bite on a parchment-lined baking sheet. You should get about 18-20 bites.
  4. Set up your breading station: Fill the first shallow bowl with flour, the second with beaten eggs, and the third with panko breadcrumbs mixed with paprika.
  5. Bread the cheese balls: Working one at a time, roll each football-shaped bite in the flour until fully coated. Shake off excess. Dip into the beaten eggs, letting extra drip off.
