  • ½ cup (120 ml) buffalo sauce (e.g., Frank’s RedHot)

  • Blue cheese dip:
  • ½ cup (75 g) crumbled blue cheese
  • ½ cup (120 g) sour cream or Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 teaspoon fresh lemon juice
  • ¼ teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

  1. Rinse and dry the cauliflower, then cut into uniform bite-sized florets (about 1.5 inches / 4 cm).
  2. In a medium bowl, whisk together flour, garlic powder, paprika, salt, and pepper. Slowly whisk in milk until smooth and thick enough to coat the florets without dripping.
  3. Add cauliflower florets to the batter and stir gently to coat each piece. Let sit for 5 minutes to absorb flavor.
  4. Preheat the air fryer to 375°F (190°C) for 3-5 minutes.
  5. Spray the air fryer basket lightly with olive oil. Place a single layer of battered cauliflower (about 4 cups / 600 g) in the basket without overcrowding.
  6. Air fry for 12-15 minutes, flipping halfway through, until golden and crispy. Spray with olive oil if pieces stick.
  7. Warm buffalo sauce slightly in a small saucepan or microwave. Toss cooked florets gently in the sauce until evenly coated.
  8. Make the blue cheese dip by combining blue cheese, sour cream or Greek yogurt, mayonnaise, lemon juice, garlic powder, salt, and pepper in a small bowl. Stir until creamy but still a bit chunky.
  9. Serve the buffalo cauliflower bites immediately with the blue cheese dip on the side. Optionally, sprinkle with extra blue cheese or fresh herbs.

Pat cauliflower dry to prevent soggy batter. Do not overcrowd the air fryer basket; cook in batches if needed. Flip halfway through cooking for even crispiness. Use olive oil spray lightly to help crisp. Adjust spice level by mixing buffalo sauce with butter or honey for milder bites.
