These spooky yet delicious no-bake Oreo truffle eyeballs are the perfect Halloween treat. With a dense, fudgy cream cheese center coated in smooth white chocolate and decorated with gummy eyes, they are easy to make and crowd-pleasing.

  • 24 Oreo cookies (or 2 cups fine crumbs)
  • 4 oz cream cheese, softened to room temperature
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup white chocolate chips
  • 1 tbsp coconut oil or shortening
  • White icing or white chocolate melts (for sclera)
  • Black or dark brown icing (for pupils)
  • Edible glitter or silver dragees (optional)
  • Gummy worms or pretzel sticks (for garnish)

Instructions

  1. Place 24 Oreo cookies in a food processor and pulse until fine crumbs form, or crush in a Ziploc bag with a rolling pin.
  2. In a medium bowl, combine cookie crumbs, softened cream cheese, powdered sugar, and vanilla extract. Mix until fully combined and moist.
  3. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to firm up the mixture.
  4. Scoop tablespoon-sized portions of the mixture and roll into smooth balls. Place on a parchment-lined baking sheet.
  5. Return the tray to the fridge for another 15 minutes to firm up the truffles before dipping.
  6. Melt white chocolate chips with coconut oil in a double boiler or microwave-safe bowl, stirring until smooth and glossy.
  7. Remove one truffle from the fridge and dip it into the melted chocolate using a toothpick or fork, coating completely.
  8. Place the dipped truffle back on the parchment paper.
  9. While the chocolate is still wet, use a toothpick dipped in black icing to draw a pupil, then add a white icing highlight for a wet look.
  10. Let the truffles sit at room temperature for 10-15 minutes or refrigerate for 5 minutes until the chocolate is fully set.

Notes

Ensure truffles are cold before dipping to prevent melting. Keep all utensils and bowls completely dry when melting chocolate to prevent seizing. If the chocolate is too thick, add a tiny bit more coconut oil. For dairy-free options, use vegan cream cheese and dairy-free white chocolate chips.
