A quick and easy one-pan dinner featuring seared chicken thighs in a rich, creamy sauce with sun-dried tomatoes, garlic, and spinach. Ready in under 20 minutes.

Ingredients

Scale
  • 4 boneless, skinless chicken thighs
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 4–5 garlic cloves, minced
  • 1/2 cup sun-dried tomatoes, chopped and drained
  • 1 cup heavy cream
  • 4 ounces cream cheese, softened
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 2 cups fresh spinach

Instructions

  1. Pat chicken thighs dry and season generously with salt, pepper, Italian seasoning, and garlic powder.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear chicken thighs for 5-6 minutes per side until golden brown and cooked through. Remove to a plate.
  4. Reduce heat to medium and sauté minced garlic for 1 minute until fragrant.
  5. Add sun-dried tomatoes and cook for 1 minute.
  6. Pour in chicken broth to deglaze the pan, scraping up browned bits. Simmer for 2 minutes.
  7. Lower heat to medium-low. Whisk in heavy cream and softened cream cheese until smooth.
  8. Stir in spinach and Parmesan cheese, cooking until spinach wilts (about 1 minute).
  9. Return chicken to the skillet, spooning sauce over the top. Simmer for 2-3 minutes to meld flavors.
  10. Serve immediately.

Notes

Ensure cream cheese is at room temperature to prevent clumping. Do not burn the garlic by keeping heat at medium or lower. If the sauce is too thick, add a splash of broth; if too thin, simmer longer. Can be made lighter by substituting heavy cream with half-and-half or milk.
