  • 34 cloves garlic, minced
  • 12 fresh jalapeños, seeded and finely diced
  • 1 tablespoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1/2 cup heavy cream or half-and-half
  • 1 cup shredded white cheddar cheese
  • 1 tablespoon fresh lime juice
  • 34 stalks green onions, sliced, for garnish

Instructions

  1. Prep the chicken and vegetables: Pat chicken dry and dice into 1-inch cubes. Dice onion and jalapeño, and mince garlic.
  2. Add ingredients to the slow cooker: Place chicken, onion, jalapeño, and garlic in the slow cooker pot. Add drained beans.
  3. Season: Whisk together cumin, chili powder, smoked paprika, oregano, salt, and pepper. Sprinkle over the chicken and vegetables.
  4. Add liquids: Pour in chicken broth and pumpkin puree. Stir gently to combine.
  5. Cook: Cover and cook on LOW for 6-7 hours (or HIGH for 3-4 hours) until chicken reaches 165°F.
  6. Shred chicken (Optional): Use two forks to shred the chicken directly in the pot, or leave cubed.
  7. Add cream and cheese: Stir in heavy cream and shredded white cheddar. Stir gently until melted. Do not boil.
  8. Finish: Stir in fresh lime juice. Taste and adjust seasoning. Serve hot, garnished with green onions.
