A simple and comforting slow cooker recipe using just three main ingredients—chicken breasts, cream cheese, and ranch seasoning—to create a creamy, cheesy dish perfect for busy nights.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts
  • 8 ounces full-fat cream cheese, softened
  • 1 packet (1 ounce) ranch seasoning mix
  • Optional add-ins: cooked bacon bits, shredded cheddar or mozzarella cheese, chopped green onions or fresh parsley

Instructions

  1. Place 2 pounds of boneless, skinless chicken breasts in the bottom of the slow cooker, spreading them out evenly.
  2. Soften 8 ounces of cream cheese by microwaving for 20-30 seconds or leaving at room temperature. Stir in one packet (1 ounce) of ranch seasoning until smooth.
  3. Dollop the cream cheese and ranch mixture evenly over the chicken breasts. Do not stir.
  4. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours until chicken is tender and easy to shred.
  5. Shred the chicken in the slow cooker using two forks or tongs and mix gently with the creamy sauce.
  6. If desired, stir in cooked bacon bits or shredded cheese and let sit with the lid on for 5-10 minutes to melt the cheese.
  7. Serve warm over rice, cauliflower rice, or alongside low-carb sides like keto coleslaw.

Notes

Soften cream cheese before mixing to avoid lumps. Avoid lifting the slow cooker lid during cooking to maintain heat. If sauce is too thick after shredding, add a splash of chicken broth or milk to loosen. Fresh chicken breasts are preferred over frozen for best texture. Can be baked in a covered casserole dish at 300°F for about 2 hours if no slow cooker is available.
