A comforting, creamy slow cooker chicken taco soup that is easy to make and perfect for busy weeknights. By blending a portion of the beans, this recipe achieves a rich, silky texture without needing heavy cream, making it a crowd-pleasing staple.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts (or thighs)
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cans (15 oz each) black beans, rinsed and drained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 cup frozen corn or 1 can (15 oz) corn, drained
  • 2 cans (14.5 oz each) fire-roasted diced tomatoes
  • 32 oz (4 cups) low-sodium chicken broth
  • 2 tablespoons taco seasoning
  • 4 oz cream cheese, softened
  • ½ cup heavy cream or half-and-half

Instructions

  1. Dice the onion, bell peppers, and mince the garlic. Trim any excess fat from the chicken breasts.
  2. Place the diced onions, peppers, and garlic into the bottom of a 6-quart slow cooker. Add the chicken breasts on top.
  3. Pour in the chicken broth, diced tomatoes with juices, rinsed black beans, kidney beans, and corn. Sprinkle taco seasoning over everything and stir gently.
  4. Cover and cook on low for 6 to 8 hours until the chicken is tender.
  5. Remove the chicken breasts and shred the meat using two forks. Return the shredded chicken to the pot.
  6. For a thicker consistency, remove 1 cup of beans and broth, blend until smooth, and stir back into the soup.
  7. Stir in the softened cream cheese and heavy cream until fully melted and combined.
  8. Let the soup sit on the ‘warm’ setting for 5 minutes to allow flavors to integrate.
  9. Taste and adjust seasoning if necessary. Serve hot with desired toppings.

Notes

If using frozen chicken, add 30 minutes to cook time. Ensure cream cheese is softened before adding to prevent lumps. The soup thickens as it cools; add a splash of broth when reheating. For a lighter version, substitute Greek yogurt for heavy cream (add off heat to prevent curdling).
