A rich, gooey dessert that combines buttery biscuits with a caramel-like pecan filling. This easy cobbler offers the classic flavor of pecan pie without the hassle of making a crust from scratch.

Ingredients

Scale
  • 2 cups pecan halves
  • 1 cup dark brown sugar, packed
  • 1/2 cup unsalted butter, melted
  • 2 large eggs, room temperature
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 can (16 oz) buttermilk biscuits

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, whisk together the melted butter, brown sugar, eggs, cream, vanilla, and salt until smooth.
  3. Optionally toast the pecans in a dry pan for 2 minutes to enhance flavor.
  4. Arrange the canned biscuits in the bottom of a 9×13 inch baking dish, pressing them together to cover the bottom.
  5. Sprinkle the pecan halves evenly over the biscuits.
  6. Slowly pour the sugar mixture over the pecans and biscuits, ensuring the biscuits are mostly covered.
  7. Bake for 40-45 minutes until the edges are bubbly and golden brown, and the center has a slight jiggle.
  8. Let the cobbler cool for 15 minutes before serving to allow the filling to set.

Notes

For best results, use room temperature eggs to prevent the butter from seizing. Allow the cobbler to cool for 15 minutes after baking to ensure the filling sets properly. Can be stored in the refrigerator for up to 3 days or frozen for later use.
