Ingredients

Scale
  • 1/2 cup (50g) rolled oats
  • 1/2 cup (120ml) milk of choice (e.g., unsweetened almond milk)
  • 1/4 cup (60g) plain Greek yogurt
  • 1 scoop (about 30g) chocolate protein powder
  • 2 tablespoons (32g) creamy peanut butter
  • 1 tablespoon (12g) chia seeds
  • 12 teaspoons (5-10ml) maple syrup or honey (optional)
  • 1 tablespoon (5g) cocoa powder (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of sea salt
  • Optional toppings: chopped peanuts, dark chocolate chips, sliced banana, extra peanut butter drizzle, coconut flakes

Instructions

  1. In a small mixing bowl, combine rolled oats, chia seeds, cocoa powder (if using), and a pinch of sea salt. Stir with a fork or whisk.
  2. In a separate bowl or directly in a jar, whisk together milk, Greek yogurt, vanilla extract, and maple syrup or honey (if using) until smooth.
  3. Sprinkle chocolate protein powder over the wet mixture and whisk vigorously until no dry powder remains (about 30 seconds).
  4. Add creamy peanut butter and whisk until fully incorporated. If peanut butter is thick, microwave for 10 seconds to soften.
  5. Pour the wet mixture over the dry ingredients and stir with a spatula until evenly moistened.
  6. Divide the mixture evenly between two 16-ounce jars, leaving about an inch of headspace.
  7. Screw lids on tightly and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  8. In the morning, stir the oats. If too thick, add an extra tablespoon of milk. Add toppings and enjoy cold or microwaved for 30-45 seconds.

Notes

Don’t skip the chia seeds—they create the creamy texture. Whisk protein powder thoroughly to avoid chalky pockets. Use room temperature ingredients for easier mixing. Layer toppings strategically: add fresh fruit in the morning, not overnight. Taste and adjust sweetness before refrigerating. Oats keep well in the fridge for up to 5 days; do not freeze.
