  • 1 large ripe banana, mashed (about ½ cup or 120g)
  • ¼ cup (64g) creamy peanut butter
  • ¾ cup (180ml) milk of choice (whole milk, oat milk, almond milk, or coconut milk)
  • ¼ cup (60g) Greek yogurt (plain whole-milk or vanilla; use coconut yogurt for dairy-free)
  • 12 tablespoons (15-30ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds (optional but recommended)
  • ½ teaspoon vanilla extract
  • Pinch of salt (optional, if peanut butter is unsalted)

Instructions

  1. Mash the banana: In your jar or a small bowl, mash the ripe banana with a fork until mostly smooth. A few small lumps are fine.
  2. Add the peanut butter: Spoon in the creamy peanut butter. If it’s cold and stiff, microwave it for 10-15 seconds to soften it for easier mixing.
  3. Pour in the milk and yogurt: Add the milk and Greek yogurt. If using a jar, put the lid on and shake vigorously for about 20 seconds until combined. If using a bowl, whisk until smooth.
  4. Add the sweetener and vanilla: Drizzle in the maple syrup or honey and add the vanilla extract. Stir or shake to combine. Taste the mixture—it should be slightly sweeter than you want the final product to be.
  5. Stir in the oats and chia seeds: Add the rolled oats and chia seeds (if using). Stir well to make sure every oat is coated. If using a jar, shake again, then open and check that everything is mixed. The oats should be fully submerged in the liquid.
  6. Seal and refrigerate: Put the lid on tight and place the jar in the refrigerator. Let it sit for at least 6 hours, but overnight is best (8-12 hours).
  7. Check the consistency in the morning: In the morning, take the jar out and give it a stir. It should be thick and creamy. If too thick, stir in a splash of milk. If too thin, add more chia seeds and let sit for another hour.
  8. Add toppings and serve: Slice half a banana on top, drizzle with extra peanut butter, and sprinkle with cinnamon or chopped peanuts if desired. Eat cold straight from the jar, or let sit at room temperature for 10 minutes if preferred.

Notes

For best results, use a very ripe banana with brown spots for natural sweetness and creaminess. The oats keep in the fridge for up to 5 days. For a thicker, pudding-like texture, add an extra teaspoon of chia seeds. To reheat, microwave in 30-second intervals, stirring between each, and add a splash of milk if needed.
