A simple, no-cook breakfast that combines rolled oats, peanut butter, and banana for a creamy, pudding-like texture. Perfect for meal prep and busy mornings.

Ingredients

Scale
  • 1 cup Old-Fashioned Rolled Oats
  • 1 cup Milk (dairy, almond, oat, or soy)
  • 2 tablespoons Peanut Butter (creamy or crunchy)
  • 1 medium ripe Banana
  • 1 tablespoon Chia Seeds (optional)
  • 1 teaspoon Honey or Maple Syrup (optional, based on banana sweetness)
  • 1/2 teaspoon Cinnamon
  • A pinch of Salt
  • Extra toppings: Sliced banana, extra peanut butter, or dark chocolate chips

Instructions

  1. Peel the banana and mash about half into a smooth paste using a fork. Reserve the other half for slicing later.
  2. In a mason jar or airtight container, add the rolled oats, chia seeds, cinnamon, and a pinch of salt. Shake gently to distribute.
  3. Pour in the milk, then add the mashed banana, honey (if using), and the 2 tablespoons of peanut butter.
  4. Stir the mixture vigorously with a long spoon or chopstick to break up any clumps of peanut butter and ensure oats are submerged.
  5. Slice the remaining banana and place slices on top. Drizzle with extra peanut butter or honey if desired.
  6. Seal the lid tightly and refrigerate for at least 4 hours, ideally overnight (8-12 hours).
  7. In the morning, stir well. Add a splash of milk if too thick. Top with extra banana or nuts. Eat cold or microwave for 30-60 seconds.

Notes

Use old-fashioned rolled oats, not instant or steel-cut, for the best texture. If using crunchy peanut butter, stir well to prevent chunks getting stuck in lid threads. Taste the banana before adding honey, as ripe bananas are naturally sweet. Store in the fridge for up to 5 days. Do not freeze as bananas become watery upon thawing.
