  • 1 pound kielbasa sausage, sliced into ¼-inch rounds
  • 8 ounces uncooked pasta (penne or rotini recommended)
  • 1 tablespoon olive oil or butter
  • 2 cloves garlic, minced
  • 1 small onion, diced (yellow or white)
  • 2 tablespoons Cajun seasoning blend (paprika, cayenne, garlic powder, oregano)
  • 3 cups low sodium chicken broth
  • ¾ cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and freshly ground black pepper to taste
  • Fresh parsley or green onions for garnish (optional)

Instructions

  1. Slice the kielbasa into ¼-inch rounds, dice the onion, and mince the garlic. Measure out pasta and liquids.
  2. Heat olive oil or butter in a large deep skillet or wide pot over medium heat. Add kielbasa slices and cook until browned and crisp around edges, about 5 minutes.
  3. Push kielbasa to the side and add diced onions to the empty part of the pan. Cook until translucent, 3-4 minutes. Add minced garlic and cook for 30 seconds until fragrant.
  4. Sprinkle Cajun seasoning over kielbasa and onions, stirring to coat evenly.
  5. Add pasta and chicken broth to the pot. Bring to a boil, then reduce heat to medium-low and cover with a lid. Simmer, stirring occasionally, until pasta is tender and most liquid is absorbed, about 12-15 minutes. Add more broth or water if needed.
  6. Reduce heat to low and stir in heavy cream and grated Parmesan cheese until creamy and smooth. Adjust salt and pepper to taste.
  7. Garnish with chopped fresh parsley or green onions and serve immediately.

Notes

If the sauce is too thick, add a splash of broth or cream to loosen it. If too thin, simmer uncovered a few more minutes. For dairy-free, substitute heavy cream with coconut or oat cream and Parmesan with nutritional yeast. Use gluten-free pasta for gluten-free version. Stir pasta occasionally while simmering to prevent sticking.
