A cozy, easy-to-make dinner featuring juicy chicken thighs simmered in a creamy Tuscan sauce with sun-dried tomatoes, garlic, and spinach, all cooked in one pan for minimal cleanup.

  • 1.5 pounds boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • ½ cup sun-dried tomatoes, chopped (packed in oil)
  • 3 cups baby spinach
  • ½ cup cottage cheese, blended smooth
  • ¼ cup Parmesan cheese, grated
  • 1 cup chicken broth (low sodium preferred)
  • 1 teaspoon dried Italian seasoning
  • ¼ teaspoon crushed red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Pat the chicken thighs dry with paper towels, then season both sides generously with salt, pepper, and dried Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken thighs and cook 4–5 minutes per side until golden brown and nearly cooked through. Remove chicken and set aside.
  3. Lower heat to medium. Add minced garlic to the same pan and stir for about 30 seconds until fragrant. Add chopped sun-dried tomatoes and stir to combine.
  4. Add baby spinach and stir until wilted, about 2 minutes.
  5. Pour in chicken broth and bring to a simmer. Meanwhile, blend cottage cheese until smooth. Stir cottage cheese and Parmesan cheese into the skillet. Mix well to create a creamy sauce. Add crushed red pepper flakes if using.
  6. Return chicken thighs to the pan, nestling them into the sauce. Cover with a lid and simmer gently for 8–10 minutes until chicken is cooked through (internal temperature 165°F) and sauce thickens slightly.
  7. Taste and adjust seasoning with salt and pepper as needed before serving.

Notes

Do not crowd the pan when searing chicken to ensure a golden crust. Blend cottage cheese well for a smooth sauce. Simmer gently to avoid curdling the dairy. Use a lid during simmering to keep chicken moist. For dairy-free, substitute cottage cheese and Parmesan with cashew cream and nutritional yeast.
