A rich, comforting, and tangy chicken soup featuring sun-dried tomatoes and heavy cream. This easy weeknight meal comes together in under 30 minutes and delivers restaurant-quality flavor with simple ingredients.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • 3–4 cloves fresh garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup sun-dried tomatoes packed in oil, drained and chopped
  • 1 cup heavy cream
  • 1 teaspoon dried Italian seasoning
  • Pinch of red pepper flakes
  • Salt and black pepper to taste

Instructions

  1. Pat chicken breasts dry and cut into 1-inch cubes. Season lightly with salt and pepper.
  2. Heat butter in a large pot or Dutch oven over medium heat. Add diced onion and cook for 3-4 minutes until soft and translucent.
  3. Add minced garlic and cook for 30 seconds until fragrant, being careful not to burn.
  4. Add seasoned chicken cubes to the pot. Brown for 5-6 minutes until mostly cooked through but still slightly pink in the middle.
  5. Pour in chicken broth and chopped sun-dried tomatoes. Scrape the bottom of the pot to release browned bits.
  6. Add Italian seasoning and red pepper flakes. Stir well.
  7. Bring soup to a boil, then reduce heat to low. Simmer uncovered for 10 minutes to allow flavors to meld and chicken to finish cooking.
  8. Stir in heavy cream. Heat through for 2-3 minutes on low heat. Do not let it boil vigorously to prevent curdling.
  9. Taste and adjust seasoning with salt and pepper. Serve hot with crusty bread.

Notes

Do not boil the soup after adding the cream to prevent curdling. If you prefer a smoother soup, use an immersion blender. For a thicker consistency, mash some sun-dried tomatoes against the side of the pot before adding cream. This recipe is naturally gluten-free. To freeze, omit the cream and freeze the base for up to 3 months; add cream upon reheating.
