  • 2 cups (about 10 oz/300g) cooked chicken, shredded or chopped (rotisserie chicken works great)
  • 8 ounces (225g) cream cheese, softened
  • ½ cup (50g) parmesan cheese, finely grated
  • ¼ cup (about 1.4 oz/40g) sun-dried tomatoes packed in oil, drained and chopped
  • 2 cloves garlic, minced
  • ½ cup (4 fl oz/120ml) mayonnaise
  • 2 tablespoons fresh basil, chopped (optional)
  • ¼ teaspoon red pepper flakes
  • 1 teaspoon lemon juice
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) if you plan to serve the dip warm. Skip if serving cold.
  2. Shred or chop cooked chicken into bite-sized pieces (about 2 cups/300g).
  3. Drain excess oil from sun-dried tomatoes and finely chop. Chop fresh basil if using.
  4. In a medium mixing bowl, soften the cream cheese by whipping it smooth with a spatula.
  5. Add mayonnaise (½ cup/120ml) and lemon juice (1 teaspoon) to the cream cheese and mix well.
  6. Stir in grated parmesan (½ cup/50g), minced garlic (2 cloves), and red pepper flakes (¼ teaspoon).
  7. Fold in shredded chicken, sun-dried tomatoes, and chopped basil. Season with salt and black pepper to taste.
  8. Transfer mixture to a baking dish or oven-safe skillet and spread evenly.
  9. Bake for 20-25 minutes until golden and hot throughout if serving warm.
  10. Let cool for 5 minutes before serving to thicken slightly.

Notes

Soften cream cheese to avoid lumps. Use sun-dried tomatoes packed in oil for best flavor. For a dairy-free version, substitute vegan cream cheese and nutritional yeast for parmesan. Cover with foil during baking to prevent over-browning. If dip is too thick, add a splash of milk or cream to loosen. Can be served warm or chilled. Store leftovers in an airtight container in the fridge for up to 3 days.
