Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup packed brown sugar
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 15 ounces pure pumpkin puree
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1 cup pecans, chopped
  • ¼ cup butter, melted
  • ¼ cup maple syrup
  • 1 cup confectioners’ sugar, sifted
  • 2 tablespoons maple syrup
  • 1–2 tablespoons milk

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish or line with parchment paper.
  2. Chop pecans and toast on a baking sheet for 5-7 minutes until fragrant. Let cool completely.
  3. In a large bowl, beat softened butter, brown sugar, and granulated sugar until light and fluffy (3-4 minutes).
  4. Beat in eggs one at a time, then mix in vanilla extract and pumpkin puree until combined.
  5. In a separate bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice.
  6. Gradually add dry ingredients to wet mixture on low speed, mixing only until flour disappears.
  7. In a small bowl, mix cooled toasted pecans with melted butter and ¼ cup maple syrup.
  8. Pour batter into prepared dish, spread evenly, and sprinkle pecan mixture on top, pressing gently.
  9. Bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
  10. Let bars cool in the pan for at least 20 minutes.
  11. While cooling, whisk confectioners’ sugar, 2 tablespoons maple syrup, and milk until smooth.
  12. Drizzle glaze over cooled bars and let set for 10 minutes before cutting into squares.

Notes

Ensure pumpkin puree is not too watery; strain if necessary. Do not overmix the batter to avoid dense bars. Toast pecans carefully as they burn easily. For gluten-free, use a 1:1 gluten-free flour blend. For dairy-free, use vegan butter and non-dairy milk.
